Grilled Buffalo Chicken Sandwich

Grilled buffalo chicken sandwiches have been a go-to meal lately because the ingredients are staples in the weekly grocery run, so we always have it on hand, and Frank basically makes dinner. Like any sandwich, you can dress it up or dress it down. Frank likes to add bacon (shocking!) to his, and while I think to add lettuce and tomato to mine, I am happy with blue cheese dressing and pepperjack cheese.

Buffalo Chicken Sandwiches
Ingredients:
2 Chicken breasts or 6 chicken tenders
Buffalo Sauce (we use Frank’s Red Hot Buffalo sauce)
Cheese (I think it depends on your preference, but we love pepperjack)
Sandwich buns

Directions:
Marinate the chicken in a large bag with 3/4 cup buffalo sauce and let sit for thirty minutes while you prepare the grill.

Chicken breasts and bacon on the grill

Grill chicken until cooked through (for chicken tenders, about 4 minutes per side and chicken breasts, about 7 minutes each side). Add cheese and cover grill until melted. Add toppings and eat!

  2. Believe it or not, I’ve never heard of buffalo chicken sandwiches before; only buffalo wings. This looks incredibly delicious! Too bad I don’t have a grill.

    You don’t have to have a grill! On the cold days, or days we don’t feel like firing up the grill, we use a frying pan that has a grill inset. Works amazingly well, and not too expensive!
