Grilled Corn. Who Knew?
The Great Minnesota Get-Together (the State Fair) is right around the corner to delight our taste buds, satisfy all of our “on the stick” cravings, and keep TUMS in business. The roasted corn booth next to the giant slide is one of my favorite spots, so it’s kind of a wonder I’ve never grilled corn myself.
Peel off the outer most layers until the layers are transparent enough to see the outline or shadow of the corn kernels. We typically remove all of the layers except the first one next to the cob. We also peel that last layer off to get at the hair and remove it. Place on the grill for 10-15 minutes, top with butter and salt, and you’ve got yourself cheaper than State Fair roasted corn. It’s also one of the few vegetables Frank will eat, so it makes a nice side to burgers.
